Juicing: the other side of the story

We have all heard the pros of juicing, so I won't bother to go into them. How bout the other side of the story? Have you ever considered:

Removing the fiber from food is called “refining.” This makes all juices, including olive juice, a completely refined food.

With regard to juice diets, low fiber diets are notorious for resulting in constipation. The health advantage of removing the fiber from one’s food is suspect. Low fiber diets are also related to cancer and many digestive disorders.

Have you heard that whole foods are optimally nutritious? How can refining a food make it more nutritious than its whole food counterpart? Sure, you concentrate certain nutrients when you juice. Do we know for certain that this is a good thing? Would concentrating the sunlight be a good thing?

Fiber is a nutrient. We are told we get more nutrients when we juice. How do we get more nutrients from a food by removing some of the nutrients from that food? This is nonsense.

I have heard all the reasons and logic behind juicing. Some of it makes perfect sense, some is crazy, while most is moderately acceptable, at least to me. I am not here to knock juicing.
I am here to speak up in favor of the consumption of whole foods. Food is refined by the removal nutrient(s). Fiber, an essential nutrient. “Essential,” in the world of nutrition, means that the nutrient is critical to human health AND MUST, AND CAN ONLY, be obtained via our diets. Essential nutrients cannot be synthesized by the body. Fiber is removed from grain, for example, in order to make refined flour. When the fiber is removed from a fruit or a vegetable, the result is called juice, a refined product.

We all know that whole foods are more nutritious than their refined counterparts. Why refine a food, throw away the fiber, and then consume the refined parts in the name of nutrition? If you want to consume juices, fine, but please, not in the name of optimum nutrition. Eating whole foods helps in the development of the habit of eating whole foods. Juicing will not help in the development of this habit. Juicing fosters the refined food habit.

Lack of fiber = constipation
Lack of fiber = abnormal sugar metabolism
Lack of fiber = poor intestinal cleansing
Lack of fiber = impaired nutrient recognition and uptake
Lack of fiber = lack of volume consumption issues

Please folks, I am not here to knock juicing. Juice if you like. But please remember that whole fresh ripe raw organic plants are the truest health foods, and act accordingly.

Women’s Health Issues - You Questions Answered

Question: We have several women (and one man with low testosterone) in our group who are experiencing increasing bone loss since changing their diets for what they thought to be the better: vegan, mostly raw. This includes one lady of 66 (who has been eating a vegan diet for 12 years), another lady of 67, and a man of 40. More recently a woman of 40 plus has reported bone loss and is both upset and mystified as, according to her, she has followed Dr. Graham’s recommendations to a “t.”
Many doctors are writing books these days citing animal products as the cause of osteoporosis, but these people were never big meat eaters even before changing. What can you tell us about this issue?

Answer: There are several issues to be considered here. Firstly, the primary cause of osteoporosis is the body’s action of drawing calcium out of the bones in order to use it as a buffer against excessive blood acidity. If the blood pH is allowed to deviate more than minimally from 7.4, death quickly occurs. Broken bones, although debilitating, are not usually in and of themselves life threatening. Although the consumption of meat and dairy products is a primary cause of an overly acidic bloodstream it is by no means the only cause. Other major causes of elevated blood acidity include:

* The eating of any type of grains
* Emotional distress (stress)
* Excess protein consumption
* Coffee drinking
* The consumption of fizzy drinks of any sort
* Alcohol consumption
* The consumption of cooked food in general
* Environmental toxins
* The inhalation of tobacco smoke
* The inhalation of automobile emissions
* The taking of drugs (any type)

The fact that a person has been practicing a vegan diet typically means that they are relying heavily on grains. The vegan diet is typically as cooked as the non-vegan diet, and due to unfounded protein concerns they may be deliberately trying to eat heavily of high-protein foods or even take protein supplementation.

Many practicing vegans drink both coffee, fizzy drinks and/or alcohol. Some pay no attention to keeping away from tobacco smoke or car emissions and many even smoke tobacco or marijuana. It is common for many vegans to remain dependent upon the medics for their health and consequently they may be consumers of drugs. All of these habits contribute to raising blood acidity. Aside from these physical causes, there exists a powerful psychological influence. The most rampant disease amongst westernized people is that of chronic stress. The physical responses to psychological distress include a whole cascade of biochemical changes that render the blood stream highly acidic.

Exposure to natural sunlight is of paramount importance to bone health and health generally. The number of people suffering from insufficient sunlight exposure is currently of epidemic proportions amongst westernized people. This is largely due to so much miseducation with regard to the causes of skin cancer.

Another very influential factor with regard to the maintenance of healthy bone mass is that of exercise. The bones are continually undergoing metabolic actions; they are being broken down (by catabolic processes) and built up (by anabolic processes). In order for anabolic processes affecting the bones to be stimulated, regular vigorous activity is necessary. Mild shock waves generated when walking or running and by the pull of the muscles as they work is known as “osteoblast activity.” In the absence of such physical exertion the integrity of the bone mass is gradually, and progressively, lost.

Finally, and most importantly, there is a most poignant factor to consider when searching for the reason why vegans, and even “long-term” raw food vegans, might experience osteoporosis. Osteoporosis does not occur rapidly over a short period of time but is a gradual and progressive condition taking many years to become clinically diagnosable. A person who is age 60 and has been a vegan for 12 years has spent 48 years setting up osteoporosis by consuming dairy and eating meat. After adopting the vegan diet they were still, undoubtedly, eating cooked foods including grains (two more of the primary causes of osteoporosis). None of this takes in to consideration their possible use of alcohol, drugs, tobacco, coffee, fizzy drinks and all the other causes of the condition such as emotional distress. Nor does it guarantee that they had sufficient exposure to sunlight.

There is great wisdom and much truth in the lesson “we reap that which we sow.” In the case of osteoporosis, as with so many life-threatening conditions, the sowing of its seeds can begin as early as childhood despite the fact that we do not harvest the results until much later in life.

To close on a positive note, once all causes of osteoporosis are discontinued, the remaining bone integrity can be saved and strengthened.

Question: Hormones–what the heck are they ?

Answer: Hormones are the chemical messengers of the body's endocrine system. A few
hormones bring about instantaneous reactions but the vast majority take hours to begin working. Physiological changes brought about by hormones can last for months or even years. The word “hormone” means to “spur on” an apt description of their influence upon cellular action.

Question: What is progesterone cream all about?

Answer: The two primary hormones involved in the female menopause are estrogen and
progesterone. Estrogen is produced in the ovaries and stimulates growth, including that of breast tissue and the lining of the womb. Progesterone is produced by the corpus leuteum, a glandular mass formed in the ovaries following ovulation. The role of progesterone is to oppose estrogen and “keep it in check.”

Gradually, as a woman ages, the ovaries slow down and eventually cease their production of estrogen, as it is no longer needed for the maintenance of the reproductive system. Although the ovaries of post-menopausal women no longer produce estrogen the liver, adrenal glands and fat cells continue to produce ample amounts to supply the rest of the body with its needs. Progesterone entirely disappears once ovulation ceases because its manufacturing plant, the
corpus leuteum, no longer forms once ovulation stops.

Once progesterone is absent, estrogen dominates and, if existing in unnaturally high levels, its stimulating actions can lead to problems. Nature did not intend for estrogen to get out of control once progesterone was no longer present, in fact, natural levels of estrogen circulating the body of a healthy woman would not be dangerously high. This is exactly why progesterone would, under natural circumstances, no longer be required following the menopause. Progesterone cream is a topical approach to increasing the progesterone level in the body. It has become available to meet a perceived requirement by consumers. These misled women are seeking to control excess estrogen rather than remove the cause of its unnaturally high post menopausal presence in their
bodies.

Question: Why do women use it?

Answer: In an attempt to alleviate the unpleasant and unnatural menopausal symptoms that they experience as a result of an unhealthy diet and lifestyle.

Question: It doesn't make sense to me to add hormones. Why is everyone around me
“hormonal,” i.e., why do they sweat all night ?

Answer: No, taking hormones to combat menopausal symptoms makes no sense and is a
dangerous game to play. The sweating (the most intense of which is usually experienced between 3:00 and 4:00 AM) is part of what is commonly referred to as a hot flash. Hot flashes are triggered by falling estrogen and rising FSH (follicle stimulating hormone) and they’re also referred to as “vasomotor flushing” as the blood vessels in the skin, head and neck dilate (expand) resulting in an engorgement of blood in those areas, creating heat and redness. Anxiety and tension exacerbates the situation. Were the levels of estrogen not unhealthily high in the first place, the drop during menopause would not be so extreme and hot flashes would not occur. A high fat diet that is the primary cause of excess estrogen.

Question: Will I avoid all of that?

Answer: Yes, if you live and eat truly healthfully. The majority of women in westernized civilization are not in a good state of health by the time they reach “mid-life.” This is primarily due to the
accumulation of toxins that have entered their bodies over the years. One specific group of toxins, known as xenoestrogens (meaning foreign estrogen), can enter the body and act just like estrogen. In post menopausal women, who lack the presence of progesterone to keep estrogens under control, these xenoestrogens actively prompt the growth of reproductive structures
predisposing the body to cancerous developments of the breast and uterus. Xenoestrogens are found in pesticides, plastics, hair dyes, cosmetics, spermicides and drinking water. They come in their most concentrated form in dairy products and meat. The animals consume vast quantities of feed, grain and pasture that have been treated with a cocktail of chemical pesticides and fertilizers. These toxins are stored in the animals’ intramuscular fat and other adipose tissues.

Probiotics

Probiotics do not counter the effects of antibiotics, as some of have been led to believe. The microbes of our intestinal tract have very short lives–usually only a few hours. They reproduce exceptionally quickly. Taking probiotics today because you were exposed to antibiotics in the 70's is like trying to give someone who drowned 30 years ago mouth to mouth resuscitation now. This is yet another futile effort at "better living through chemistry" that has been foisted on well-meaning health seekers.

The Effects of Steaming Our Food

Q: Still what adverse effects can steaming have – are there any besides a diminishing of food quality?

A: Nutrition affects literally every cellular function. The function of the cells determines the function of the tissues, glands and organs, systems and eventually, the function of the entity. Every person is totally dependent upon good nutrition for their health. It is not the only determinant of health, but it is an essential.

The nutritional damage that happens when we steam a food is the measure of the damage, but does not fully represent the impact that eating devitalized food will have on someone's health.
For an idea of the cellular damage done to your broccoli when you "lightly steam" it, try doing the same thing to your hand. See how much steam it can handle before there is cellular damage done that affects the very function of your tissues. This damage (to your hand and to the broccoli) does not simply represent nutritional damage, but also represents structural damage. Structural damage means that proteins are denatured, damaged, deranged or destroyed.

Upon consumption, this destruction will be noted by various methods in your digestive tract, especially by your white blood cells (WBC), which will be rushed to the area to attempt to stem the tide of this "foreign and unwelcome invader." Healthy WBC counts are approximately 1/5 or less of "normal" WBC counts, which are elevated because of the simple inclusion of steamed veggies. The drain on the person to constantly generate 10 times the healthy level of WBCs is reflected by a lowering in their overall health and vitality. There is a limit to how high the WBC count can go. If the WBC count is already elevated in an effort to deal with cooked foods, how can it elevate even more in order to do its other jobs?

All hyperstimulation eventually results in hypofunction. We have discussed this in regard to the pancreas, adrenals, and the gall bladder. Eventually, this constant drain on WBC production results in exhaustion and an overall lowering of wbc producing ability, a condition commonly referred to as AIDS. This is just the tip of the iceberg in regards to steaming foods, but all there is time for at the moment. I hope it helps.

Q: How much fuel is used to steam foods and what environmental impact did that fuel consumption represent?

A: How many people get burned each year handling pots of boiling water? How many houses burn down because of cooking fires, and how many people die? Is it really worth it to steam your broccoli?

Cool Running

When a piece of machinery is running efficiently and is properly cared for, we do not expect it to overheat. Something went very wrong before overheating became a problem. The human body works in much the same fashion. Properly cared for, our temperature never reaches the danger zone we call "fevered."

Medically speaking, a person is in a fever when body temperature rises above 99 oF. Above 100 oF we begin to feel poorly. So, we do all we can to avoid fever, or so we are told.

The conflict comes, apparently, with the introduction of physical activity. We are told that physical activity should begin with a “warm up”. What exactly is a “warm up,” you might wonder. Well, according to sports physiologists, the warm up occurs when one raises core temperature by any amount beyond 1 degree F. Sweating does not indicate having achieved a warmed up state. Sweating is one of the body's many methods of avoiding getting warmer–it is actually a method of cooling. Only by overcoming the body's ability to maintain a steady temperature do we achieve a truly warmed up state. Which brings us to our problem.

"Normal" body temperature, we are told, is 98.6 oF. Warm up just half of one degree and we have reached the beginnings of a fever. Complete a comprehensive warm up, more than 1 degree F, and we are into a full blown fever. As we begin our workout in earnest, we raise temperature even more. The danger of this practice is easily demonstrated by simply counting the number of young athletes who die of overheating every summer on the football fields of the United States. People who are suffering from high fever are known to have visions, hallucinations, and otherwise impaired mental abilities. Yet this is the exact state we achieve as our athletic endeavors intensify, even though at "crunch time" we are likely to need our mental powers even more than ever. The last two minutes of a basketball game can get so hectic that the play is described as being "at a feverish pitch." This is not good if we want our team to demonstrate clear levelheadedness.

On a low fat raw vegan diet, a typical athlete will have a resting temperature of around 93 oF. (S)he can warm up as much as desired, play as intensely as possible, and the true fever will likely never be reached. Clear thinking becomes the norm, rather than the exception. Efficient functioning is most readily achieved when body temperatures run healthfully, in the lower 90's.

On a global scale, global warming trends are also indicators that all is not running efficiently, that our Earth is not being properly treated and cared for. Deforestation, construction, development, misuse of public resources, etc., all contribute to the problems, with very few people contributing to the solutions. Merely realizing that 90% of all wood burned world wide is being burned to cook food points out a huge segment of our problem.

Homeostasis, a condition where all things remain relatively the same, is the key to efficient and effective running of the human body. The same can be said for our planet. If we actively work to bring the trees back onto our earth, we will be heading in the right direction. Picture every tree being to the earth as each red blood cell is to you. How many would you want to give up?

Plastic - get it out of your diet!

When research scientists found breast cancer cells growing wildly in petri dishes that had not had a growth stimulant added, they were mystified. By contacting the petri dish manufacturer, they were able to trace the growth stimulant to a change in the petri dish plastic formula, to which a plasticizer had been added.

Plasticizers are chemically known as phthalates. They are often used as a softening agent in plastic formulas. Along with causing breast cancer, they have also been found to alter the hormones of adults and children. They have been termed "endocrine disruptors." Besides sticking to our thyroid hormones in the cells, they are found to alter the reproductive system's program for development. Many girls are now experiencing "precocious puberty," growing breasts and pubic hair as early as ages 6-7. Boys are being born with micropenises and undescended testicles. Sherry Rogers, M.D., an expert in environmental medicine, says, "Phthalates, which are known carcinogens as well as hormone mimics, are like fertilizer for cancers of the breast and prostate."

The high level of phthalates in our bodies amazes government scientists. But why is it surprising? We buy many of our foods and beverages in plastic. Babies are fed in warmed plastic baby bottles. Many people buy all of their drinking and cooking water in plastic.

Bottled drinking water uptakes plasticizers from the container, especially when stored in a warm environment. Hopefully, that same water is not then microwaved in plastic, as microwaves greatly increase the molecule exchange! Even boxed beverages contain a plastic lining, and canned goods have a lacquer lining that is found to have the same action as phthalates in 7 of every 10 cans. On the plus side, 3 of every 10 can linings do not have this toxic action.

Until the buying public challenges the manufacturers, there will not be an impetus for change. Meanwhile, do all you can to avoid phthalates in your diet.

No Plastic is Perfect

Prominent plastics researcher and educator Paul Goettlich of the Berkeley Plastics Task Force Berkeley, California and <www.mindfully.org> wrote: “First, plastic is made by combining many toxic synthetic man-made chemicals by a process called polymerization. The plastics industry tells us that this process binds the toxic chemicals together so tightly that they are no longer toxic to us. But they don't tell us that the polymerization process is never 100% perfect. It always leaves some of those toxic chemicals available to migrate out of the plastic product and into whatever contacts it–your food, you, air, water, and so on.

Secondly, many of these chemicals not only cause cancer, but also disrupt the normal functioning of the endocrine system of most animals, including humans. They have been given the name endocrine disruptors. These toxic man-made chemicals have been shown to be accumulating in the bodies of both humans and the animals we eat. Hormones act in single digit part/per/trillion (PPT) concentrations, and have an effect on virtually every bodily function. The effects of disrupting the normal activities of hormones can be devastating and permanent. The industry answer to the warnings of environmentalists is that the toxic chemicals that make up plastics do not come out. Once understand that you are aware of the fact that those toxicants always migrate from all plastics, then they change their tune and say that it happens at extremely low levels that cause no harm, and that the migration happens well below the regulatory limits. On that point they are mostly right, but they wrote the regulations and eased them into law through political contributions.

Paul Goettlich concludes that there is no safe plastic. He further states: “The lesson to learn is that plastic—any and all plastic—is an unsustainable material and its production should be halted immediately and until it myriad of problems can be solved. And I strongly suspect that the problems will remain and that no "alternative" plastics will be found. Whether the ingredients are outright hazards, or the quantities of materials being used are unsustainable makes little difference.”

Remove pits from medjhool dates, halve them and press them in to a shallow pie dish to form a base. Fill the dish with mashed banana then press in to the bananas finely diced celery. Blend a mango and pour it over the top. Lip smacking good!

Orange Creme Dressing

Add a cup or more of macadamia nuts to a blender, then add approx. 1/2 cup of fresh-squeezed orange juice, then blend at high speed. Add nuts and juice to get the consistency you desire. Use a spoon if needed to dress a fresh garden salad and enjoy!

It is important to "find the time to eat." I make time. I stop. I eat. Then I do what is next on my agenda.

What is the point of putting so much importance on the quality of the foods you eat and then finding that you have no time to eat it? What is the value of spending so much time prepping that there is not time to eat whole foods?

We like to pat ourselves on the backs for doing something so different from what we used to do in the past. What is so different about dehydrating (essentially, slow cooking), juicing (yet another method of turning whole foods into refined food fractions) and generally prepping raw food just like you did when you cooked your food?

Raw foods are finished products, ready for consumption, perfect as is. Stop. Eat. Enjoy.
