* We regret to say that this year’s Symposium has been canceled. Plans for a 2003 Symposium began on the last day of the hugely successful 2002 Symposium. Negotiations with hotels went more slowly than anticipated, and eventually became impossible. We did eventually find a suitable location, but they require a deposit that exceeds HLI's capabilities at this time.

We are immensely thankful for the support of each and every one of you, and remain dedicated to
bringing you the finest of hygienic educational materials and events. Toward that end, we are at this time close to announcing the dates and location for our 2004 Symposium which we expect to be held in August in Florida. We are strongly considering southern California for 2005. Negotiations are in progress right now. We are most grateful for Laurie Masters’ stellar efforts on these projects.

Environmental Influences and Considerations in the Creation of Health

Clean Air
Some experts think that the quality of the air we breathe has more impact upon our health and longevity than any other single factor. Air pollution is certainly a major contributory cause of many diseases, especially of the respiratory tract and all forms of cancer. Common air pollutants include: carbon monoxide (automobile emissions and tobacco); sulphur dioxide (coal burning and industrial waste); nitrogen oxides (automobile emissions and burning of coal and natural gas); and hydrocarbons (automobile emissions and industrial waste).

Air also contains both positive and negative ions. An ion is an atom, or group of atoms, with an electrical charge. The presence of these ions is influenced by many things including radioactivity, thunderstorms and the active movement of water through air, such as the breaking of waves, waterfalls and rain. When the relationship of positive to negative ions becomes out of balance it affects human health adversely. Air laden with positive ions has been shown to result in increased breathing rates, elevated blood pressure and the development of cancer. In contrast, an abundance of negative ions has shown to result in superior physiological functioning.
Air that has been breathed is high in positive ions and low in negative ions. The average home has one of the worst qualities of air due to the concentrated quantity of products used that give off toxic gasses and the tendency to keep it insufficiently ventilated.

Simple steps to improve the quality of air inhaled include:
1) Sleeping with as many windows open in the bedroom as possible
2) Exchanging the air inside the home for that outside by opening all the windows for a period of time each day.
3) Avoiding all tobacco contaminated air
4) Minimizing time spent in cities
5) Minimizing time spent traveling in automobiles

Neurotoxins
A neurotoxin is a poison that damages the ability of the nervous system to function. It does this by destroying or disrupting either the neurons (nerve cells that are the basic building blocks of nervous tissues); the protective sheath around the nerve fibres (myelin sheath); or the chemical messengers that enable neurons to communicate with each other (neurotransmitters).

Neurotoxins can affect the body’s neurons by causing structural or functional damage to the neurons preventing it from being able to communicate. Mercury, for example, damages the cell body of neurons destroying their ability to fire electrical signals. Carbon disulphide (used in the manufacture of rayon and cellophane) interferes with the ability of axons to send information.

An enormous volume of prescription drugs are neurotoxins. Some neurotoxins affect the central nervous system while others damage the peripheral nervous system.

Central Nervous System
Due to the existence of the blood-brain barrier, toxins must have a specific chemical structure if they are to permeate this protective barricade. Should toxins gain access to the brain and spinal cord the potential effects can include:
_ Loss of memory
_ Changes in emotions
_ Swelling of brain tissues
_ Irritability
_ Anxiety
_ Hallucinations
_ Delirium

Peripheral Nervous System
As the peripheral nervous system does not have the protection of a barrier between itself and the circulating blood, it is especially vulnerable to damage from toxins. If neurotoxins gain access to the peripheral nervous system their effects will depend upon if it is the sympathetic or parasympathetic branch of the autonomic system that is affected. For example, a neurotoxin that primarily affects the sympathetic nerves connected to the heart might raise blood pressure while one that affects the parasympathetic nerves might cause a drop in blood pressure.

Point of Entry
Neurotoxins can enter the body via inhalation, ingestion, absorption through the skin, or absorption through the mucous membranes.
Once in the body the extent and immediacy with which it damages the nervous system depends on:
1) The type of neurotoxin. Cocaine, for example, has immediate and apparent as well as delayed effects. Lead can take months or even years before producing noticeable neurological symptoms.
2) The size of the dose
3) The frequency of exposure
4) The duration of exposure
5) Continuous exposure or intermittent

Vulnerable Individuals
Due to the fact that the blood-brain barrier is still in its formative stages The Unborn Child is especially vulnerable to neurotoxins. In addition, the developing foetus is undergoing extensive neural development and the invasion of neurotoxins can result in an extensive range of damage including motor and sensory deficits, lowered intelligence, learning disabilities and behavioural problems.

The Elderly
Older people are more susceptible to the effects of neurotoxins due to a number of structural and chemical changes that typically occur with the onset of creptitude. The ability of the body to process toxins becomes less efficient and effective with age plus neurotoxins will accelerate any neural degeneration already present.

Nutritional Implications
Air pollution and neurotoxins result in an increased toxic load for the body rendering it more challenged to maintain its blood pH within the necessary boundaries.

The greater the toxic load:
1) the greater the acidity of the body, resulting in accelerated reliance upon alkaline buffer salts (calcium) to maintain a blood pH of 7.4
2) the greater the proliferation of free radicals and consequent need for antioxidants in the diet
3) the greater the number of nutrients destroyed by toxins
4) the more enervated the nervous system resulting in compromised digestion, absorption, uptake and elimination
5) the less efficient the transportation and delivery of oxygen to the cells of the body resulting in a compromised ability to metabolize fats

Key Nutrients
The most important group of nutrients for healthy neural functioning are those of the vitamin B complex. As they are water soluble it is necessary to provide a regular supply of these vitamins in the diet. The best source of B vitamins is fresh raw fruits.
The key antioxidants needed for protection from free radicals are beta-carotene, vitamins C & E and selenium.
The best sources of all antioxidants are found in fresh raw fruits and vegetables.
All antioxidants are destroyed or deranged by exposure to heat (cooking).

GARLIC

Garlic contains allicin and mustard oil both of which are irritants to the delicate membranes of your body. The easy basic rule is: if you couldn't make an entire meal out of something then it is not a food for humans. However, if during transition adding a little garlic keeps you on a raw vegan path and away from the destruction of cooked grains, flesh and dairy then by all means include it.

Taste buds are delicate things--they lose their ability to taste subtle flavors when they are regularly confronted with powerful flavorings. If you remained with simple fruits and veggies, nuts, seeds and avocados for a while, and did not use condiments, your ability to discern natures delicious subtle flavors would gradually return.

Body Composition and Management

Identifying Healthy Body Composition
The body is composed of different types of tissue. “Lean tissue” is a term used to collectively describe those tissues other than fat, such as muscle and bone. “Adipose tissue” is the correct term for stores of body fat. A person's total body weight (TBW) is the sum total weight of their entire
body. There are various methods of ascertaining what percentage of a person's TBW is made up of fat tissue. Someone with a very high percentage of muscle on their body may have a TBW that exceeds the recommended level for their height, yet have a very low percentage of body fat. In contrast, just because a person weighs lighter on the scale it is no guarantee that they do
not have an unhealthy muscle to fat ratio.

Obesity is defined when body fat levels exceed 20% of the ideal. Definitions are also made relating to the Body Mass Index (B.M.I.) where obesity is represented by a figure over and above 25. Ideal ranges for body fat are between 5% and 10% for man and between 10% and 15% for women. Most authorities state them as being higher than this with recommendations for men being anything up to 20% and women up to 25%. This is due to the fact that the average person so far exceeds the ideal that a compromise is offered. The state of being under-muscled is as common a problem as being overfat. A healthy body is lean and strong.

Causes of Obesity
Consumption of calories in excess of needs, as dictated by activity levels.
This can be due to any number of the following:

· Eating to numb emotions
· Eating to fill a spiritual void
· Eating to punish or reward self
· Eating to overcome fatigue
· Eating to quench addictions
· Eating for social bonding
· Eating for love feeding
· Eating as only pleasure in day to day life
· Eating for memory association
· Eating to relieve boredom
· Eating to meet demands of hunger arising from malnutrition

Other causes of obesity include:
· Compromised digestion / assimilation
· High intake of toxins
· Metabolic / hormonal imbalances

A healthy diet, in both quality and quantity of nutrients, consists of those foods that have the highest nutrient to calorie ratio.

The best approach for an overfat person is to increase their nutrient per calorie dense foods and increase their levels of physical activity. It is inappropriate to attempt to lose more than a maximum of 3 pounds of body fat per week. One pound per week is recommended. One pound of body fat represents 3,500 calories. To lose a pound of fat in one week a person would need to consume 500 calories less than their calorie expenditure each day. This can be done by increasing calorie out put by 250 calories (equivalent to a little under an hour's brisk walk), and reducing their calorie intake by 250 calories. For those people who consider themselves too thin, it is unlikely that their body fat % is unhealthily low. It is probable that they are severely under-muscled and are best advised to take up regular strength training to create a healthier, and more aesthetically pleasing, body composition.

CLEAN UP THE AIR YOU BREATHE
1. If you are a smoker make a committed decision to get this addictive poison out of your life. If you are a nonsmoker choose to avoid all smoky atmospheres.
2. Grow house plants - they act as superb natural air purifiers.
3. Improve the air in your home and office by keeping the windows open. If you are cold it is healthier to put on more clothing than to shut the window. Always sleep in well-ventilated room.

CLEAN UP YOUR WATER INTAKE
4. Increase consumption of fresh raw fruits and veggies. The water content of these foods is abundant and the purest available. The more raw fruits and veggies you consume the less you will desire toxic beverages.
5. Drink distilled water or that purified by reverse osmosis.
6. Drink water between meals in response to thirst.

CLEAN UP YOUR DIET
7. Simplify your meals by using fewer ingredients
8. Make a large raw veggie salad the focus of one meal each day. Have raw ripe fruit for all other meals.
9. Avoid eating “on the run.” Sit down and relax for at least 20 minutes after each meal.

CLEAN UP YOUR CONSUMERISM
10. Avoid applying anything to your skin that you would not be willing to
swallow.
11. Throw out the medical drugs that you keep “just in case.” In the words of Dr. Doug Graham: “Health assurance is better than health insurance!”
12. By cleaning up your lifestyle, especially your diet, deodorants and other camouflages of foul body odour become redundant. Bodies that are clean inside smell naturally sweet. If you need to neutralize body odours ask yourself what you are doing to cause yourself to smell in the first place. Stress, as well as toxic foods, will result in body odour.

DEVELOP EMOTIONAL POISE
13. Learn how to meditate and take a few quiet moments to practice each day.
14. Cultivate the habit of focusing on the positive aspects of every situation. Seven days without a smile makes one weak!
15. Enroll on an assertiveness training course or read a good book on the subject.

BECOME MORE PHYSICALLY SELF-RELIANT
16. For local errands walk, run, cycle or skate rather than taking the car.
17. Choose stair climbing rather than using escalators or lifts.
18. Give away unnecessary labour saving gadgets around the home and accomplish the tasks using your own muscles.

INVEST IN THE MAGIC OF SLEEP
19. Practice relaxation techniques prior to sleeping. There are many excellent audiocassettes available to lull you into a deep sound sleep.
20. Adopt the habit of “power napping” during the day. Simply closing your eyes and sitting somewhere quiet for ten minutes can have a remarkably rejuvenating effect on an otherwise exhausting and hectic day.
21. Go to bed earlier! It is one of the simplest and most effective of lifestyle changes. Your waking hours will be far more dynamic and productive when you feel energetic.

Start applying these principles today and begin to experience the rich rewards in the way you look and feel!

Broccoli Dip by Prof. Rozalind Gruben
Blend the flesh of two oranges with some raw tahini (enough to make a thick paste).
Place the orange and tahini dip in a small dish in the center of a large plate.
Cut a head of broccoli into florets and arrange them on the plate around the dish.
Invite a friend to go dipping with you!


The Rainbow Dagwood by Dave Klein

Ingredients
1 lg. bell pepper, cored, de-stemmed and sliced horizontally near the top
1/2 cup celery, diced
1 sm. avocado, mashed
handful of whole dulse leaf, rinsed and hand squeeze-dried
1 yellow beet, processed into “spaghetti” using a Veggie Spiralizer
1 cucumber, sliced
1 lg. tomato, sliced
handful of sunflower greens (sprouts)

Instructions
1. Process the celery and avocado together to make a creamy slaw mixture.
2. Fill the bottom of the bell pepper sandwich with the slaw.
3. Add the remaining ingredients in layers.
4. Top with the upper part of the bell pepper and enjoy!
Options: substitute your choice of sprouts, grated vegetables or nut or seed cheese, or nut or seed butter in lieu of the avocado.
