My name is Leszek. I'm 22 years old. I write to you because I would like to become raw foodist but I don't know what I should do. I know there is much information on the internet but I haven't explored a lot of it. As I live in small village in Poland I am not knowledgeable about this lifestyle. WHY FAST?

WHAT IS FASTING?
Fasting describes the temporary abstinence from all food and drink (except water)
whilst securing physiological, mental, emotional and sensory rest. It is a method
of maximally enhancing the body's ability to cleanse, heal, restore and rejuvenate
itself on a cellular level. Fasting may continue for as long as the nutritional
reserves of the body are adequate to sustain normal metabolic function. To continue
abstinence beyond the time when the body's stored reserves are used up is to
induce malnutrition, and eventually, starvation.
HOW HAS FASTING BEEN MISINTERPRETED?
"Detox" is a buzz word of our times. Over the last decade the full impact upon
health of environmental pollutants, poor dietary choices and sedentary lifestyle
has begun to be recognized. Many people are searching for ways to counteract
their previous unhealthy choices, including attempts to "spring clean" their
bodies. Although such intentions are essentially well directed, the danger lies
in a lack of understanding of how the body works. Few subjects are as grossly
misunderstood and misinterpreted as fasting. Fasting itself does nothing, it
is simply a way of allowing the body sufficient opportunity to conduct its own
healing processes. The truth is, the act of fasting in itself heals nothing,
but facilitates the body's ability and efforts to self heal. To call fasting
a therapy is therefore erroneous, as no "treatment" is involved.
Numerous so-called fasting techniques are touted by the whole spectrum of media from magazines and newspapers to books and TV. Mono fruit "fasts," such as the exclusive consumption of grapefruit or melon over a fixed period of time, are frequently advertised as being the proverbial "cure all" and ultimate weight loss regime. This claim is grossly inaccurate on four counts.
1. The word "fast" means to "abstain from," so, strictly speaking, a grapefruit "fast" describes the consumption of all foods except grapefruit.
2. Fruit does not have the intelligence or ability to conduct any healing of the human organism whatsoever. Only the brain has the necessary wisdom and dictatorship to initiate, modulate and terminate bodily processes.
3. The healing made possible by implementation of fasting has its limitations. These are set according to the vitality of the individual, the degree to which damage has already taken place, and the manifestation of the diseased state.
4. If health is the goal, it is vital to realize that health is built through healthy living practices on a day to day basis. No amount of periodic fasting can annul or counteract past abuse of the human body.
Fasting simply allows healing to take place, but the scars of abusive living can never be totally eradicated. The state of a person's health is the collective result of the dietary lifestyle and psychological choices they have made so far. It is also affected by genetic influences and the environment in which they have been living. It is what is done between fasts that has the greatest impact on health. Congruent with the treatment mentality, many advocates of fasting incorporate various types of intervention in their approach. This includes a wide assortment of formulas, elixirs and potions in the form of powders, vitamin preparations, herbal mixes, drinks and a multitude of concoctions designed to speed up the action of the liver and promote other detoxification processes. In fact, most simply result in diuresis by blocking or poisoning the ability of the kidney's collecting ducts to reclaim water. All such types of ignorant interference create bodily disorder and distress; effectively detracting from the body's natural healing processes and adding further to its toxic load. The use of enemas or colonic irrigations while fasting are other examples of a profoundly blundering misunderstanding of the body and its needs.
The application of these "treatments" is based on two erroneous beliefs: 1. they speed up detoxification and 2. if allowed to remain in the bowel, toxins will be reabsorbed back into the body. Both assumptions are inaccurate.
The body is the master of its own domain and will cleanse itself at the speed of its choosing, independent of outside interference. In fact, intrusion will only create further challenges to its functioning and therefore impede the cleansing process. An example of this is the way in which the pressurized water involved in colonic irrigation actually has the tendency to force wastes further back into the bowel, slowing elimination. When the body is left to its own devices the bowel only reabsorbs water, not toxins. It is worth mentioning, however, that in a few rare cases, where the natural peristaltic action of the intestines has become so crippled by poor eating habits as to render the bowel nonfunctional, that the judicious implementation of an enema may prove necessary.
IS FASTING NATURAL?
Unlike most humans, wild animals have not lost touch with their natural instincts
and offer us insights into how best to treat the body when in a diseased or
distressed state. When sick or injured, animals will instinctively find a warm
and comfortable spot to lie down and rest. The usual absence of appetite that
accompanies such times is acknowledged and the creature will shun food. Most,
however, will continue to take water, provided that it is available to them.
Instinctively animals know that in order for rapid and effective healing to
take place, the body needs total rest.
In contrast, as a result of the human tendency to sacrifice instincts for intellect, most people will attempt to maintain their hectic work schedules when sick or injured. Not only are the standard rich dietary habits continued but other people advise them to eat more to "keep up their strength." Instead of recognizing and respecting the body's innate healing powers, toxic drugs are used for quick relief in order that the individual can return to the "normal" lifestyle (that was, no doubt, the cause of their ill health in the first place), as soon as possible!
In nature other examples of fasting can be observed that are not in response to disease. Hibernation, demonstrated by a wide variety of creatures, is a classic case in point. Likewise, estivation (the summertime version of hibernation) is surprisingly common. In both cases the animals exist for many months at a time in a state of deep rest ingesting no food whatsoever but surviving on the nutritional reserves within the body. For certain creatures the mating season is a time when the male of the species fasts, while the females of other mammals often fast through periods of nursing.
IS FASTING AMONGST HUMANS A "NEW" SCIENCE?
The earliest recordings of humans fasting for health benefits (as opposed to
for religious or political reasons) date back to the ancient civilizations of
Greece and the Near East. Plato and Socrates undertook several ten day fasts
in order to "attain mental and physical efficiency." Pythagorus fasted for forty
days prior to taking his examination at the university of Alexandria. The ancient
Egyptians implemented fasting in order for the body to cure itself of syphilis.
The Greek physician Hippocrates prescribed fasting during the critical periods
of disease. An Arab physician by the name of Avicenna, recommended patients
fast for three to five weeks duration. In the sixteenth century the famous Swiss
doctor Paracelsus stated that in his opinion, "fasting is the greatest remedy."
In the seventeenth century a doctor by the name of Hoffman wrote a book on the
subject entitled "Description of the Magnificent Results Obtained Through Fasting
in All Diseases".
So, fasting is by no means a "new" science. It is, more accurately, a forgotten instinct which, by its very nature, would seem to date back to the development of animal life itself. To fast is to intelligently do nothing but provide the organism with maximal rest in order for it to have the opportunity to heal itself.

OUR BODY IS SELF-SUFFICIENT

While striving at self-sufficiency on a homestead, our body is already an "old hand" at such matters. From the moment of birth, the body is self-healing or self-repairing, self-directing and self regulating on a continual basis. Let's take a look at how it has been accomplishing this task.
Cells of Repair
Our body has certain cells with very specialized jobs to perform. These cells
work for us to maintain health and thwart any outside influence that may interfere
with our well being.
Neutrophil
The neutrophil is a white blood cell that is one of the most common and most
important of the cells active in the healing and repair process. These cells
contain large quantities of a characteristic protein that has a marked ability
to dispose of decayed or spent bacteria and other debris.
During the inflammatory reaction, neutrophils migrate into the tissues where they are very active phagocytes. In this situation, neutrophils are mainly responsible for ingesting the unwanted debris that accumulates. During phagocytosis, the granules or lysosomes of the cells are discharged and many of the cells die; the aggregate of dead neutrophils forms the material known as pus. Bacteria then proliferate to feast on this pus, thus making it easier to expel.
Eosinophil
Eosinophils are white blood cells that occur in the bloodstream in much smaller
numbers than do neutrophils. They are also somewhat phagocytic and are found
in greatly increased numbers in both blood and tissues during inflammatory conditions.
Basophils
Basophils constitute only 0.5 percent of the white cells of the blood. They
are said to contain histamine and a heparin-like substance. Histamine dilates
capillaries and often permits fluid to move through the capillaries and into
the tissues. Heparin is an anticoagulant of the blood. Apparently tissue basophils
become the mast cells of the tissues. The large granules of mast cells are thought
to store enzymes. Mast cells are important in cellular mechanisms needed during
injury.
Monocytes
There are comparatively few monocytes in the blood about 5 percent of the total
white cell count. Monocytes are actively motile and phagocytic. It is thought
that they function in contributing to the repair and reorganization of tissues.
Monocytes and macrophages are capable of engulfing old, worn out neutrophils,
mast cells, and particles of tissue in the process of cleaning up an area of
inflammation after the initial stages have been passed and recovery is in progress.
Fibroblasts
The function of fibroblasts in tissue repair is to lay down dense collagen fibers
to form a firm, mechanically-strong replacement for dead tissue. The simplest
such situation is after an incised wound has been made in the skin. There the
collagen fibers are oriented transversely across the incision, restoring mechanical
strength.
Lymphocytes
Lymphocytes are also strongly phagocytic and carry out their duty of healing
and repair by assisting the neutrophils during inflammation conditions and injury.
The Organs of Repair
Lymph Nodes
The lymph nodes contain small lymphocytes and large dendritic macrophages. The
dendrites of the macrophages carry important impulses or messages to the cell
body. The lymph stream widens very greatly as it passes through the node; therefore
the rate of flow is greatly reduced. The lymph filters through a maze of passageways
lined with phagocytic cells. Such cells engulf bacteria and other foreign materials
from the lymph stream. Thus the body is kept in a healthy and stable condition.
The Spleen
The spleen has four major functions:
1. Blood destruction - Old red blood cells are destroyed in all parts of the reticuloendothelial system, including those of the lymph nodes and spleen. (Reticuloendothelial system applies to those cells scattered throughout the body that have the power to ingest bacteria and solid particles.)
2. Cellular production - The spleen manufactures lymphocytes and monocytes.
3. Blood storage - The spleen serves as a reservoir for blood, or, more specifically, for red blood cells, as most of the plasma is returned to the circulation whereas red blood cells are enmeshed in the splenic bulb. Marked contraction of the spleen occurs during muscular exercise, thereby releasing red blood cells and increasing oxygen capacity. The spleen undergoes rhythmic variations in size in response to physiologic demands, such as exercise and hemorrhage, and thus influences the volume of circulating blood. The volume of stored blood may vary from a liter to as little as 50 ml.
4. Blood filtration - The spleen, serving as a part of the body's reticuloendothelial mechanism, filters spent cells and their debris from the blood.
The Liver
Organisms are filtered from the blood by macrophages in the wall of the sinusoids
(minute blood vessels), and various toxic chemicals are removed from the blood
by liver cells. The sinusoids are lined partly by flat nonphagocytic endothelial
cells and partly by more rounded and irregular shaped macrophages (or Kupffer
cells) that project into the lumen of the sinusoid. These cells are similar
in structure to macrophages elsewhere and are avidly phagocytic. The protective
function of the liver is associated with its ability to detoxify products of
catabolism that might accumulate in dangerous proportions. These products are
changed chemically into substances that can be excreted by the kidneys or through
the intestinal tract. Macrophages present in the liver sinusoids aid in filtering
foreign matter from the blood.
The Bone Marrow
Bone marrow is highly important as the source of the cells of the blood and
other cells in the body's system. Development of blood cells within the bones
commences during the fifth month of fetal life. Blood-forming elements appear
initially in the centers of the bone marrow cavities; the blood-forming centers
later expand to occupy the entire marrow space. This widely-dispensed blood
cell formation continues until puberty, when the marrow in all the ends of the
long bones becomes less cellular and fattier, giving rise to yellow bone marrow,
in which most of the hematopoietic tissue has been replaced by fat. In the adult,
only the redbone marrow, located principally in the skull, vertebrae, ribs,
sternum, and pelvis, retains hematopoietic activity. The total productive bone
marrow in the adult is about 1,400 gm.
It is apparent that a most important part of the bodily repair mechanism is the production of cells--polymorphs, lymphocytes, macrophages, and plasma cells. When bodily mechanisms break down, one of the commonest causes of impairment is failure to produce these cells. The failure may be due to drugs or poisons, to gross errors in diet, to destruction of the bone marrow by neoplasm, or to irradiation of the marrow. The way that the mechanism fails depends on what group of cells is most severely affected. If the precursors of neutrophil polymorphs are affected, then there is an acute shortage of cells able to phagocytose dead or decaying bacteria. Alternatively, the megakaryocytes may be damaged. These are the precursors of the blood platelets, the cells that play a vital part in blood clotting. In their absence, the blood will not clot and the individual may bleed to death. Such abnormalities only occur in an enervated and toxic body. When you are living correctly, cells that are active in healing and repair will be present in correct numbers to maintain a state of health.
From the above study of the roles of the cells and organs of repair, you can clearly see that the body is constantly at work to maintain homeostasis or ideal operating conditions. Even under some adverse conditions (when we disobey some physiological law of nature), these forces remain active. It is only after repeated abuse that the healing forces fail because they become overwhelmed and exhausted. It is the duty of the teacher, then, to instruct his client to restore the conditions of health. The body's healing forces will then regain normalcy.

THE BAD NEWS ABOUT RAW FAT

This introductory piece gives you a glimpse into an essential and controversial raw-food issue: the fact that the average raw fooder consumes an astonishingly unhealthy amount of fat. Confusing Advice About Fat
Most mainstream and "raw" experts assert that eating fat does not make us fat.
They tell us that refined isolated fats and oils should be considered "health
foods." Many raw-food leaders teach that consuming fat won't harm us as long
as it's raw. Some even insist that eating up to 80% of calories from fat is
perfectly fine. They say that the unstable fats in nuts and seeds can withstand
the heat of lengthy dehydration and subsequent room-temperature storage without
degrading. They even go so far as to classify refined oil as "juice," suggesting
that we drink it as a daily health practice. You would do well to question all
of this advice. Consider the following:
Myth: If It's Raw, It's Okay
Despite the marketing hype from vendors of olive, flax, borage, hemp, grapeseed, and other "healthy" oils, these products are stripped of their carbohydrates, protein, and fiber. That means oils are refined foods--no longer the whole foods we all know our bodies were designed for. Worse, we consume quantities of fat as oil that we would be unlikely to eat as whole foods. Here are some important facts about fat.
* Cooked or raw, higher-than-healthy levels of fat in the bloodstream force fat to precipitate and adhere to arterial walls, a condition known as atherosclerosis. A variety of vascular disorders are related to excessive consumption of dietary fat.
* Cooked or raw, increased fat in the bloodstream reduces the oxygen-carrying capacity of red blood cells, predisposing us to cancer and adversely affecting all cellular function, including brain-cell function. This results in impaired clarity of thought and decision making and may set the stage for senility, memory dysfunction, and learning disabilities.
* Cooked or raw, increased fat in the bloodstream requires an increased adrenaline response in order to drive the pancreas to produce insulin. Following excess stimulation, adrenal exhaustion sets in, the precursor for conditions such as Epstein-Barr virus, chronic fatigue syndrome, lupus, and myofascial disease, to name just a few.
* Cooked or raw, increased fat in the bloodstream results in increased demand for insulin. The resultant continuous drain on the pancreas eventually leads to pancreatic fatigue and chronically elevated blood-sugar levels. This predisposes us to a group of lipid (fat) metabolic disorders, mistakenly referred to as "blood-sugar metabolic disorders": hyper- and hypoglycemia, hyperinsulinism, candida yeast, diabetes, and others. Whether you eat cooked animal fat or raw vegetable oil, too much fat is too much fat, and we must recognize its health-destroying potential.
Fat, Not Sugar Is the Culprit
Here lies a key and often-misunderstood physiological fact: In the presence
of fat, our bodies require significantly higher-than-normal amounts of insulin
to transport blood sugar across the vessel wall and the cell membrane. It's
the fat--not the sugar--in our diets that is a primary cause of candida, diabetes,
and other blood-sugar problems. In "Fruit or Fat?," I discuss this at length.
So, How Much Fat Should We Eat?
The percentage of calories that we consume as fat is an essential consideration
for all of us, cooked or raw. The Pritikin Longevity Center, which holds the
finest health regeneration record of any organization in the U.S., recommends
a dietary fat consumption of 10% or less. Keeping your fat consumption down
to a maximum of 10% of your calories is by far the most healthful practice.
SAD, Veggie, Vegan, Raw...Fat, Fat, Fat, Fattest?
Here are some numbers that may shock you. It is a well-known fact that those
who eat the standard American diet (SAD) average a whopping 42% of their calories
from fat. Surprisingly, I've found that vegetarian and vegan diets tend to contain
approximately 42% of calories from fat, as well. Vegetarians tend to consume
a high amount of dairy, and vegans generally increase their use of oils. Most
unexpectedly, I have found that the average raw fooder eats even more fat than
those who live on standard American fare. The oils, nuts, seeds, coconuts, avocados,
olives, durians, and other fatty fruit in the overall diet of raw fooders add
up to an astonishing 60% of calories (often much more) from fat.
"Fruit or Fat?" will step you through the numbers in detail. For now, I'll give you just a brief illustration. A large green salad, including an entire head of romaine lettuce, some tomatoes, and a variety of nonroot vegetables would contain about 100 calories, some 15 of which would come from fat. A dressing that blends three tablespoons of oil (375 calories), an ounce of pine nuts (178 calories), and some cilantro, salt, and lemon juice would supply about 550 calories - about 530 of them from fat. Dice in a small avocado (250 calories - 85% fat), and the resulting 900-calorie meal would provide about 90 calories from carbohydrates, about 55 from protein, and more than 755 of its calories from fat - that's 84% fat!
80/10/10 for Optimum Health
When I've done this math on full meal plans with thousands of raw fooders over
the years, theyÿve seen for themselves: the standard raw diet is extremely high

You're Likely To Be Consuming Too Much Fat If You

The Generosity, Sincerity, and Dedication of T. C. Fry for Natural Hygiene

I was just relaxing, then all of a sudden I began thinking about what T. C. Fry called "The Korean Project." At that moment it suddenly dawned upon me how generous and sincere in teaching Hygiene he was. He paid me what I said I needed for a little over a monthÿs work and paid my helper, Diane Shelton, Hygienist Life Science student and Hygienist about the same for working plus our air fare to Korea, in order to care for about 40 tubercular patients that were confined to a Catholic tubercular hospital near Seoul. The hospital did not pay him, I am sure. He did this stunt merely to show that Hygiene is good in all conditions, even tuberculosis and many were in the degenerative stage, and bleeding from the lungs.
The Koreans selected to be a part of the project eagerly did their fasts. They went off medication and happily fasted even though they knew nothing about Hygiene or fasting to begin with. They trusted us and fasted and rested as I advised. T. C. Fry spent a month of his life and a lot of his money in Korea. He was so happy while he talked about Hygiene with the patients and the directors of the institution. Diane and I worked very hard from 7:00 A.M. until about 6:00 P.M. I examined each tubercular case when they entered and at the end of their fasts. Diane took notes that I dictated to her about the condition of the lungs while I examined each patient with the time tested but slow technique of physical examination. It was legal because I was sponsored and worked under the license of a licensed Korean M.D. At the hospital, before we went to the country place where the project was to be held, I was allowed to view the x-rays to determine which individuals could participate in the project. They were all in such bad shape that it was difficult to choose.
Anyway, the demonstration went well. The "Korean Project" was followed daily by national TV and all the newspapers as well as magazines. Before leaving, we were asked to speak in a huge auditorium. The place was so full they had to turn away people and you would have thought that Elvis himself was going to sing. People from all over South Korea came to hear the wonderful news about the improvement and complete healing of some of the tubercular patients in one month. After we left, our contact told us that the young school teacher who was completely healed, and released from the Catholic Hospital, went all over Korea teaching Natural Hygiene to thousands of interested people.
It all started when T. C. Fry was in Korea purchasing persimmon trees to grow in Texas for one of his projects. He boasted that Hygiene could heal all the tubercular people, which is pandemic in Korea, in a month. Somehow, the word got out to the hospital and they took him up on it. I am sure he had to use much of his own money to stage such a big project. He was generous with his time and money and he really loved talking Natural Hygiene, just as his son David said at our First International Symposium last August.
